The Peek-a-Boo Squares Were a BIG HIT!

Kim May was thoughtful enough to bring a generous comliment of freshly baked, Peek-a-Boo Squares with her to the JEWELRY EVENT last weekend. They were light & flakey and just the right amount of sweet! Kim was also kind enough to hand out the recepie for those interested...and she ended up running out so here it is for your future enjoyment:


Peek-a-Boo Squares:
1 cup shortening
2 cups sugar
4 eggs
1 tsp. vanilla (substitute almond extract with cherry filling)
3 cups flour
1 can pie filling-cherry, blueberry, lemon or pineapple

Preheat oven to 350 degrees. Cream shorting and sugar. Add eggs, one at a time; beat well. Add vanilla and flour. Mix well. Spread 3/4 of dough onto an ungreased jelly roll pan (cookie sheet with low sides). Top with pie filling, spreading evenly over batter. Drop remaining batter by the teaspoonful over filling leaving spaces to create marbling effect. Bake 30-35 minutes.

Recepie note: This recepie is lovingly dedicated to Kim's sister, Kara Millis, who like these squares is "a blast from the past!"


Along with the now famous sqaures, there was a fantastic jewelry event that featured the likes of Mikimoto Pearls, signed Miriam Haskell pieces, Tiffiny & Company pins, various and very funky Bakelite bracelets and pins, an interesting collection of enamel pins, a stunning sterling, lapis stones and marcassites necklace, and a wide array of diamonds and gemstone bracelets, necklaces and rings to mention a few.
